Beluga Royale
Introduction
One of the rarest caviars on the market, the Beluga Royale Caviar (Acipenser Huso dauricus) produces caviar with yellowish/gold pearls. This rare and amazing caviar is semi firm to firm with colors ranging from steely grey to dark gold. Nicknamed as “Almas” or in the Persian language translates to Diamonds, this highly sought after caviar reigns as the rarest caviar of them all. This sturgeon is native to the Amur basin that flows from Russia into China. Yet, the species delivers excellent caviar – once favored by the Persian Empire as the food for kings – and is not commonly seen in Western markets.
The Beluga Royale Caviar has a distinct flavor and expect a pronounced rich flavor and a smooth finish with a mouthful of umami. This caviar is produced in very limited supply each year.
